However, they are really not as hard to cook as they might seem!<\/span><\/p>\n<p><span style=\"font-weight: 400\">So here\u2019s an easy to cook recipe for healthy chicken enchiladas.<\/span><\/p>\n<h3><strong>Ingredients<\/strong><\/h3>\n<h5><strong>Sauce:<\/strong><\/h5>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Olive oil (1 tsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Garlic cloves, minced (4)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Chipotle peppers (2)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Adobo sauce (1 tbsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Tomato sauce (1 can, 450g)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Oregano (1 tsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Chilli powder (\u00bd tsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Ground cumin (\u00bd tsp)\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Low sodium vegetable or chicken broth (1 cup)\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Sea salt (\u00bc tsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Fresh pepper (\u00bc tsp)\u00a0<\/span><\/li>\n<\/ul>\n<h5><strong>Enchilada Filling:<\/strong><\/h5>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Olive oil (1 \u00bd tsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Chicken (about 2 breasts, cooked and shredded)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Corn (\u00bd cup)\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Black beans (\u00bd cup, cooked)\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Onion, medium yellow (\u00bd , diced)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Garlic cloves, minced (3)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Cilantro (\u00bc cup)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Chilli powder (\u00bd tsp)\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Cumin (\u00bc tsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Enchilada sauce (\u00bd cup, prepared above)<\/span><\/li>\n<\/ul>\n<h5><strong>Enchiladas:<\/strong><\/h5>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">7-inch whole wheat tortillas (8)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Shredded Mexican cheese (1 \u00bd\u00a0 cups)<\/span><\/li>\n<\/ul>\n<h5><strong>Toppings:<\/strong><\/h5>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Green onions\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Fresh cilantro<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Jalape\u00f1os (optional)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">plain Greek yogurt (optional)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">\u00a0sour cream (optional)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">sliced avocado (optional)<\/span><\/li>\n<\/ul>\n<h3><strong>Instructions<\/strong><\/h3>\n<h5><strong>To Prepare the sauce:<\/strong><\/h5>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Place a medium-sized sauce man on a medium flame. Add in the olive oil and garlic and cook for about 1-2 mins. Once the garlic is nice and fragrant, add in the chipotle peppers, adobo sauce, tomato sauce, oregano, chilli powder, cumin, broth, salt and pepper. Now cook and bring to a boil.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Reduce the heat and let the pot simmer for 5-10 mins on a low flame. This will help thicken the sauce.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Set aside and let cool, until it&#8217;s ready to be used.<\/span><\/li>\n<\/ul>\n<h5><strong>Enchiladas:<\/strong><\/h5>\n<p><a href=\"https:\/\/www.ketoindia.fit\/health\/wp-content\/uploads\/2021\/05\/Healthy-Chicken-Enchiladas1.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\" wp-image-32106 alignright\" src=\"https:\/\/www.ketoindia.fit\/health\/wp-content\/uploads\/2021\/05\/Healthy-Chicken-Enchiladas1-200x300.jpg\" alt=\"Healthy Chicken Enchiladas\" width=\"362\" height=\"544\" \/><\/a><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Preheat the oven at 400 degrees fahrenheit.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">In a medium skillet, heat the olive oil over a medium-high flame. Now, saute the garlic and onions until they start to turn translucent (about 4-5 mins). Once the onions and garlic are done, add in the chicken, corn, black beans, cilantro, chilli powder, cumin and 1\/2 cup enchilada sauce. Cook for another 4-5 mins whilst stirring occasionally to mix well. Set aside.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Use a 13 by 9-inch baking dish for the enchiladas. Spray the baking dish with non stick spray. Now, fill in each tortilla with the chicken, vegetable and black bean filling we prepared (\u00bc\u00a0 to \u2153\u00a0 cup per tortilla). Sprinkle some cheese into each of the tortillas and roll them up.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Now that the tortillas are ready, place them in the baking dish seam-side down.
