Packed with lots of fresh and healthy ingredients, this low-carb pasta alternative is a tasty family meal that\u2019s fancy enough to serve to the company.<\/p>\n<h4>Ingredients<\/h4>\n<ul>\n<li>2 medium zucchinis<\/li>\n<li>olive oil, to taste<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>2 cups fresh spinach (80 g), chopped<\/li>\n<li>1 cup ricotta cheese (250 g)<\/li>\n<li>2 tablespoons fresh basil, finely sliced<\/li>\n<li>salt, to taste<\/li>\n<li>pepper, to taste<\/li>\n<li>1 cup marinara sauce (260 g)<\/li>\n<li>\u00bd cup shredded mozzarella cheese (50 g)<\/li>\n<\/ul>\n<h4>Preparation<\/h4>\n<ul>\n<li>Preheat oven to 425\u00b0F (220\u00b0C).<\/li>\n<li>Cut off the end of each zucchini then using a vegetable peeler, peel each zucchini into wide strips.<\/li>\n<li>Transfer the zucchini strips to a plate then layer two strips vertically and two strips horizontally to make a cross.<\/li>\n<li>Repeat the process with the remaining strips.<\/li>\n<li>Heat a pan over medium-high heat.<\/li>\n<li>Add olive oil then garlic and saut\u00e9 for 30 seconds to 1 minute.<\/li>\n<li>Now add spinach, salt, and pepper. Saut\u00e9 for 1-2 minutes, until wilted down.<\/li>\n<li>Remove from heat and allow to cool for 10 minutes.<\/li>\n<li>In a large bowl, add the spinach and garlic. Add the ricotta, basil, salt, and pepper. Mix until well combined.<\/li>\n<li>Using a spoon or cookie scoop, scoop approximately 1 tablespoon of the mixture and place in the middle of each zucchini noodle cross.<\/li>\n<li>Fold each side to seal the ricotta mixture then flip over the ravioli so the seam side is on the bottom.<\/li>\n<li>In a baking dish pour the marinara sauce then smooth with a spatula.<\/li>\n<li>Evenly place the zucchini ravioli then top with mozzarella cheese.<\/li>\n<li>Bake for 15-20 minutes.<\/li>\n<li>Serve with fresh basil.<\/li>\n<li>Enjoy!<\/li>\n<\/ul>\n<h4>Nutrition Info<\/h4>\n<p>Calories 475<br \/>\nFat 35g<br \/>\nCarbs 18g<br \/>\nFiber 4g<br \/>\nSugar 8g<br \/>\nProtein 24g<\/p>\n<p>We just love this dish and we hope that you will feel the same after you eat it.
